On Saturday, after our hike, Sailor Boy and I went to a pumpkin patch and apple orchard. We ended up buying a few pints of apples and I got the great idea of making an apple pie. My very first pie ever. I am definitely baking-challenged, so I was a little nervous. I opted against making my own crust...I think I need to start out slowly. So I bought a roll out crust and found a fabulous Paula Deen recipe for the filling. I have to say...it's a very labor intensive pie. All that peeling, coring and chopping - it took me forever just to prep it all! But I think it's going to be worth it!
I have to admit...it won't be winning any "beautiful pie" awards. And my lattice work sucks...I totally didn't criss cross it properly - I sort of just laid them over each other. Oh well...judging from the smell in our house, I have a feeling it will taste much better than it looks!!
EDIT: The pie is actually really good!! I think I should have left it in the oven for maybe 5-10 minutes longer because it was sort of runny, but the taste is perfect! We had it warmed with some vanilla ice cream and OMG! I wanted to eat the whole pie! I'm going to keep making it until I get it perfect...then it will be my signature dessert! yay!

I definitely suggest an apple wedger or full-blown peeler/corer - neither are expensive at all!
Then you have a great excuse to use apples anytime you want :-)
